Ingredients for veg pulao:
1 cup basmati rice (soaked 20 minutes)
2 tbsp ghee / clarified butter or oil
2 cup water for pressure cooker ( 2 ½ cup water for pot)
Salt as needed
Spices -
1 tsp cumin seeds
1 bay leaf
2 inch cinnamon
4 green cardamoms
3 cloves
1 star anise (optional)
1 strand mace(optional)
Vegetables -
½ onion (thinly sliced)
5 beans (chopped)
½ cup peas1 carrot (chopped)
1 small potato potato (cubed)
Preparation -
1. Add basmati rice to a bowl and rinse it a few times until water runs clear.
2. Soak it for 20 minutes. After 20 minutes, drain off the water completely and set aside.
3. while the rice soaks, rinse Carrot, potato, beans and chop all of the vegetables.
4. Heat 2 tablespoons of butter or oil in Pressure cooker or hot pot.
5. Add all the whole spices and saute for 30 to 60 seconds or until they begin to sizzle.
6. Fry onions until they turn gold.
7. Add all the veggies and saute for 2-3 minutes.
8. further, add 2 cup water, salt and stir well to a rolling boil. Next add drained rice and stir.
9. If cooking in a pot, cover and cook on a low heat until the water is absorbed and the rice grains are cooked. When the rice is done , turn off the stove.
10. If making in a pressure cooker, cover the cooker with a lid . then cook on a medium high flame for 1 whistle.
11. Switch off the stove. When the pressure releases, remove the lid.
12. Veg pulao is ready to serve.
