Chop the rhubarb and put it in a lightly greased baking dish.
Add sliced apples if desired.
Stir to mix the two fruits.
Sprinkle lemon juice over to prevent the apples from browning.
Mix flour and sugar and cut in the cold butter.
Stir the dry mixture into the fruit.
Make the topping by combining the brown sugar and flour, then cutting in the cold butter.
Stir the quick oats into the topping mixture.
Pour the topping mixture over the fruit in the baking dish.
Even the topping mixture out but do not mix it into the fruit, then bake the crisp.

Cool until warm or completely cooled. Serve with a dollop of ice cream...mmm!
