Speaking of Fujian, everyone will immediately think of Fujian cuisine, one of the eight major cuisines. There are many delicacies in Fujian cuisine, including the Buddha Jumping Over the Wall at the Manchu and Han banquets. Today, let's take a look at history and see this historical name. How did the food come about?
During the Daoguang period of the Qing Dynasty, officials of the Fuzhou Official Money Bureau hosted a banquet for Zhou Lian, the provincial governor of Fujian. At the banquet, a dish called "Fu Shou Quan" was made of chicken, duck, lamb trotters, pig trotters, spare ribs, pigeon eggs, etc. Zhou Lian was very satisfied after eating it. After returning home, chef Zheng Chunfa imitated the original dish according to the law, reduced the amount of meat, and added a variety of seafood to make the finished dish richer in content and better in taste. Later, Zheng left the Governor's Mansion and went to Fuzhou East Street to open a restaurant "Sanyouzhai" (the predecessor of today's "Ju Chunyuan" restaurant in Fuzhou), serving this dish at literati gatherings. The literati applauded after tasting it, and someone wrote a poem on the spot: "The aroma of meat overflows on the altar, and the Buddha heard that he abandoned Zen and jumped over the wall." Since then, this dish has been called Buddha Jumping Over the Wall.
