Hot Italian Sausage
2 1/2 # Ground Venison
2 1/2 # Ground Pork (loin / shoulder roast)
1 TB Kosher Salt
2 TS Coriander
2 TS Ground Pepper
1 TS Red Pepper crushed
2 TS Minced Garlic
1/4 TS Anise Seed
1/2 TS Fennel Seed
Mix venison, pork and seasonings. Cook a small patty to test taste.
