In general, 3 credit classes equal 0.5 blocks of time in the timetable and 5 credit classes equal 1.0 blocks of time in the timetable. Grade 10 and 11 students are expected to have a full timetable (no spares), 8.0 blocks.

COMMERCIAL FOODS
Students will have the opportunity to work in a state of the art commercial kitchen facility. The majority of instructional time will be spent preparing, cooking and baking food for the school population. Learning to cook and bake requires tasting and sampling so bring your appetite. The Food Prep courses will develop basic and advanced skills needed to succeed in the workplace; it will also give you an advantage if you decide to take a post secondary culinary or baking program. If you have a craving to learn more about culinary arts or baking then you may wish to join the Skills Team and compete at Skills Alberta.
Food Prep 10: 3 credits [0.5 blocks] or 5 credits [1.0 blocks]
In this course you will prepare and cook a wide variety of recipes with emphasis on the safe use of kitchen equipment and proper food handling techniques. Students will learn to make food from scratch, no box food here! Students will prepare, cook and bake items like pizza, chicken wraps, cookies, muffins, cakes, poutine, tacos, chicken wings, mac and cheese and lots more! Lunch is on us when it’s your turn to serve lunch. [Sample Course Outline] Students in Food Prep 10 and Domestic Foods 10 earn the same credits; students can not be enrolled in both courses. Both courses are prerequisites for Food Prep 20 and Domestic Foods 20.
Food Prep 20: 5 credits [1.0 blocks]
Prerequisite: Foods 10 or Food Prep 10
Students will be immersed in a working kitchen atmosphere where they will be learning a new skill every day. This fast-paced environment will push students to exceed their own expectations. You will begin to create your own cooking “style” while preparing, cooking and baking items such as fresh breads and pastries, soups and sauces, salads, cream pies, cakes, cinnamon buns, poultry and fish entrées to name a few.
Food Prep 30: 5 credits [1.0 blocks]
Prerequisite: Foods 20 or Food Prep 20
These advanced courses give you the opportunity to create your own recipes and menus. Students will take the lead of being the Head Chef of a team of students when their menus are featured as the special of the day. Students will also prepare fancy breads, ethnic foods, cakes and desserts to name a few.
DOMESTIC FOODS
Domestic Foods is a valuable course in which students develop basic knowledge, skills and attitudes through the preparation of a wide variety of foods. These classes are offered at introductory through advanced levels, with the number of credits depending on courses completed.

Welcome to our comprehensive culinary arts program! This hands-on course takes you through the exciting journey of home cooking, from mastering fundamental techniques to exploring creative cuisine. In Foods 20, you will develop essential skills in topics such as: bread-making, basic meat preparation, and working with dairy products. Moving into Foods 30, you will advance to more complex techniques including artisanal yeast products, sophisticated meat cookery, and regional cuisine exploration.
The highlight of our program is the Rams Mystery Box Challenge, where you demonstrate your culinary creativity by crafting complete meals from surprise ingredients. This unique assessment approach mirrors real-world cooking scenarios you will encounter in home kitchens, helping you become a more confident and adaptable home cook.
