For our Vegetarian friends we prepared this Cheese and Zucchini Stuffed Manicotti the was eaten faster than ever and was simple to make. Here is my recipe.
Ingredients:
1 24oz Jar of Ragu Simply Traditional Sauce.
7 Manicotti shells (1/2 box).
2 cups chopped zucchini squash
8 - 16 oz whole milk ricotta (My wife doesn't care much for ricotta but loves this recipe so I put a little less. If you love Ricotta, use full amount)
1 egg
1/2 cup shredded Whole milk Mozzarella Cheese
Italian Seasoning, salt and pepper to taste.
Directions:
1) Preheat oven to 375 degrees F. Boil Manicotti noodles as per package minimum time to keep 'al dente' firm for stuffing.
2) Sauté zucchini in oil until brown (about 7 minutes)
3) Combine Ricotta, egg, salt, cheese and herbs. Stuff Manicotti noodles with cheese, zucchini, cheese, zucchini, cheese fillings.
4) Pour some sauce in a baking pan on the bottom and place stuffed Manicotti as they are filled. Once all stuffed manicotti are in pan, top with remaining sauce liberally. Cover with foil and bake for 30 minutes.
