This was much easier and better than I imagined. And I did it on the BBQ with great results and flavor.
Ingredients:
1 x 2-3 lb whole fryer chicken
2 tablespoon olive oil
2 tablespoon your favorite chicken spice(s)
Spatchcock your chicken:
Using scissors, cut the backbone out. Lay it flat and press down as flat as you can.
Rub olive oil on skin side and rub your spice over.
Cooking:Â
Preheat your grill to 350 degrees F.
Place chicken skin side up on indirect heat on grill and cook for 30-40 minutes until internal temperature is 145 degrees F.
Move chicken to direct heat and cook 5-7 minutes per side (Watch when skin side down to not allow it to burn) until internal temperature reads 160 degrees F. (Check near bone temperature)
Remove and let chicken rest for 10 minutes. Slice to your favorite cut pieces.
