I am deviating from my usual recipe wiki entry to start some Cooking Tips. This first one is how to touch your meat to determine it's doneness. Usually I cut it open to peak but this lets the juices run out and causes uneven and dryer food. So look at this chart and compare to the meat cooking to see how it is done without cutting into it! Notice the finger positions when checking your hand feel to get the meat feel for the meat doneness touch test.
