I am a meatloaf lover but many in my family are not, so it is a special treat when I can make my special meatloaf
Here's what I use:
3/4 cup Milk
5 bread slices
1 lbs Ground Pork & 1lbs Ground Beef (or just 2lbs of Ground Beef)
3/4 cup Graded Parmesan
salt & Freshly ground black pepper to taste
Finely chopped 1/4 large onion
Dried Parsley and Herbs de Provence to taste
3 eggs beaten
6 bacon slices
3/4 cup your favorite BBQ Sauce
Here's what I do:
Preheat oven to 350 degrees F.
Pour milk over bread and allow it to soak in for a couple of minutes. Place the ground Beef/Port, milk-soaked bread, Parmesan, salt, pepper, parsley and Herbs de Provence (or your choice of spices) in a large bowl. Add eggs and onion and mix all ingredients until well combined. I use my hands for best results. Shape mixture evenly into a loaf on a foil lined broiler pan which will allow the fat from the meat to drain. Lay the bacon slices over the top. Pour 1/3 of the BBQ sauce over the top of the meatloaf and bake for 45 minutes. Pour another 1/3 of the BBQ sauce over the meatloaf and bake for another 20-25 minutes until meatloaf is no longer pink in the middle. Allow to set for 10 minutes before serving. Serve the remaining BBQ sauce on the side. I like to serve this with elbow macaroni.
