I love Chili, Chili with Hot Dogs, Chili with Fritos or just a big bowl for lunch. Here is a version that I prepare the night before in a slow (Crock Pot) cooker.
Here's what I use:
1 pound lean ground 1/2 beef 1/2 pork
1 cup chopped onion
1 large green bell pepper, seeded and diced or 4oz can diced green chilis
1 jalapeno or Anaheim pepper (Depending on how hot you like it)
1 tablespoon chili powder
2 teaspoons cumin powder
3 cloves garlic
sugar to taste
salt to taste
pepper to taste
1 teaspoon sugar, or to taste
1 can Ro*tel diced tomatoes w/peppers
1 can crushed tomatoes
1 bottle beer
1 can (16 ounces) kidney beans (Optional)
Here's what I do:
Saute Onions and peppers. Place into wok, cast iron or Crock Pot. Add garlic and then ground meat with salt, garlic and pepper to taste. Add remaining ingredients into Pot. Set for low and cook for 30 minutes. Add additional salt, pepper, sugar, cumin and chili powder to taste. Top with a dollop of sour cream.
