I love meatloaf, but my wife was not a big fan of it until I came up with this simple recipe. It needs some sort of individual baking pot or bowl like a Ramekins or Onion soup oven safe. The key is the meat: I get Meat loaf from the local butcher but it is basically part ground beef (18% fat) and ground pork. Let me know what you think.
Ingredients (2 Servings)
~9oz Meat Loaf (I like 66% Ground Beef & 33% Ground Pork) This is the key ingredient so get good quality from your butcher when possible.
1/4 Cup Panco
1/4 Cup Whole Milk
1 Egg
Preheat Oven to 375 Degrees.
Mix all ingredients in a bowl and squeeze with your hand until all are well combined.
Bake for 30 minutes.
Pull and top with your favorite Meatloaf topping (Ketchup for me and BBQ sauce for my Wife).
