Lovely flavour and light, so it's a good starter to a meal. Serve with crusty bread.
Ingredients:
1 kg ripe tomatoes
1 onion
1 head of celery
2 litres of water
1 tab stock powder
2 tab tomato paste
2 tsp sugar
2 tsp cornflour
salt and pepper to taste
Method:
roughly chop tomatoes, onion and celery and place in a large pot with the water
bring to the boil and then reduce to a simmer for 1 hour
strain out the vegetable pulp and discard
return the stock to the pot and add the stock powder, tomato paste and sugar
mix the cornflour in a little water and add to the soup. Stir well
return to a simmer and adjust seasoning if necessary
serve.
Tips:
The soup can be frozen for a few months.
