Great when you want something warming and filling. Serve with custard.
for the pudding
1 cup self raising flour
1/ 2 cup sugar
pinch of salt
1 cup sultanas
1 egg
1/ 4 cup milk
for the sauce
1 tablespoon butter
3 tablespoons golden syrup
2 cups boiling water
Grease a casserole dish and set oven to a moderate heat
mix all the pudding ingredients together and pour into the casserole dish
mix the sauce ingredients together and carefully pour over the pudding batter
bake in a moderate oven for 30 to 40 minutes
Tips:
This is a basic recipe and you could vary it by replacing the sultanas with other dried fruit and/or nuts. Citrus zest would be nice or try adding mixed spice.
