This recipe reminds me of Kourabiedes (Greek cookies), those wonderful confections made with chopped almonds, shaped like crescents and has a clove stuck into the middle of them. I like this recipe just as much. Try to use eating walnuts - the cooking walnuts are too bitter for my taste.
Ingredients:
250g butter
1/3 cup sugar
1 tsp vanilla essence (1/2 tsp vanilla paste or extract)
1 tab water
2 cups plain flour
pinch of salt
1 cup finely chopped eating walnuts
sifted icing sugar
Method:
cream butter, sugar and vanilla
add water and beat in well
fold in flour, salt and chopped walnuts
form the dough into a ball, cover and refrigerate for 1 hour to firm up the dough
take portions and form into finger shapes
place on lined baking tray
bake for 20 mins in a moderate oven until lightly browned
remove from tray and roll carefully in sifted icing sugar
allow to cool on rack
roll in icing sugar again and store in an airtight container - place baking paper in between layers of biscuits to protect them.
