I have to admit that I don't really have a recipe for pancakes because I tend to make it up as I go along. However, I start with the same quantity of flour to milk. My secret is to use a little baking powder to make them fluffy.
If you have some cream (sour or plain) that is reaching its use by date, you can use it in the recipe as a substitute for all or some of the milk. Buttermilk is another alternative and you can make your own by adding a tsp of lemon juice to plain milk and setting it aside for a few minutes.
Other flavourings can be added as you please. This recipe is enough for 2 - 3 people.
Basic Pancake ingredients:
1 egg
2 tab sugar
1 cup milk
1 tab oil or soft butter
1 cup SR flour
1 tsp baking powder
pinch of salt
extra butter for cooking
Method:
Place a frypan on medium heat
place the egg and sugar in a bowl or large jug and whisk to combine
whisk in the milk and oil (or butter)
fold in the dry ingredients and stir until combined
add a tab of butter to the hot pan
pour about 1/3 cup of mixture into the pan and tilt to spread the mix evenly into a circle.
cover and allow to cook until there are bubbles forming in the mixture and the bottom is browned.
flip the pancake and continue cooking the underside
remove to a plate covered with a paper towel
continue cooking pancakes until all the mixture is used
Serve with flavourings of your choice.
Suggested flavours:
maple syrup
sliced banana with a drizzle of honey
sliced strawberries with a little whipped cream
sprinkle of sugar with lemon juice
fruit sauce
heat 1/2 cup of jam with 2 tab rum and 1/4 cup of water to make an adult sauce
icecream toppings such as caramel, chocolate etc.
Alternatives:
Instead of adding fruit on top, try incorporating some into the mixture prior to cooking the pancakes. A grated apple and a 1/2 teaspoon of cinnimon works well, or add some fresh or frozen berries if you have them.
