This recipe is one of my Mum's and calls for powdered milk. If you don't have any, try using malt powder. Otherwise, use ordinary milk and add a little extra flour (couple of tablespoons extra should work).
Ingredients:
125g butter
1 1/2 cups firmly packed brown sugar
1 egg
1 tsp vanilla essence (1/2 tsp vanilla extract)
2 cups plain flour
1/2 cup powdered milk
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp bicarbonate of soda
nuts or glace cherries for decoration
Method:
melt butter in a saucepan
add brown sugar and stir over low heat for 5 minutes
allow sugar mixture to cool
beat in egg and vanilla
gradually fold in the dry ingredients until combined
roll portions of mixture (about walnut shell size) and place on a lined baking tray.
press a nut or half glace cherry on top of the ball
bake in a moderate oven for about 15 minutes (until lightly browned)
remove to a cooling rack
store in an airtight container
