This is an unpretentious cake, quick to make and small enough to enjoy for morning or afternoon tea with friends. It is nicest eaten within a couple of hours of baking.
Ingredients:
1/3 cup sugar
1 tab butter
1 egg
1/3 cup milk
1/2 tsp vanilla essence
1 cup SR flour
Extra:
butter for spreading
sprinkling of sugar
sprinkling of cinnamon powder
Method:
Cream butter and sugar
add egg and continue beating until combined
stir in milk and vanilla
fold in the flour
pour into a small cake pan which has been greased and floured
bake in a moderate oven for about 1/2 hour - until cooked when tested with a skewer
remove from the tin to a cooling rack
while still hot, spread butter over the top and sprinkle with sugar and cinnamon.
