Not sure why this is called "Mock Chicken" but it's a nice spread for savouries biscuits or you could serve it as a dip.
Ingredients:
1 tsp butter
1 finely chopped onion
1 large tomato, skinned and sliced
1 beaten egg
2 tab grated cheese
2 tab soft breadcrumbs
1/2 tsp dried mixed herbs
salt and pepper
Method:
melt the butter in a medium saucepan
add the onion and cook until soft
add the other ingredients, seasoning to taste
continue to cook for a few minutes
bottle and refrigerate.
