As a general rule I try to keep the total weight of my gear, food and water for a week to less than 15kg. Unfortunately I am falling prey to more and more technology, which means by the time I add a GPS, camera, PLB, and a mobile phone to my pack I have accumulated almost an extra kilogram of gear.....
In general winter demands a two skin tent (no flyscreen!), a bit more clothing, and a lot more fuel to melt snow. If you plan on camping in the low country beware of single skin tents, as they don't do well in the rain.
