I calculate my needs on the basis that I can afford to loose 1kg per week of travel, and still maintain performance.
In general I don't distinguish between the caloric requirements of summer versus winter trips, for me each seem to use similar amounts of calories.
However, the ease of preparing food and cleaning up needs to be considered. For example, If I'm cross country skiing I want to reduce the need to clean pots...particularly of gluggy cereal, as melting snow demands more fuel be carried.
The attachment below gives an indicative list for a seven day winter trip. Note: in winter I make sure I carry breakfast bars, and if the trip is going to be particularly strenuous, or there will be foul weather, I carry more food.
A note of caution: women are able to get by on fewer calories. Many of the guys I ski with budget on using about 3500 calories in a day....but then some of us have a well adapted feast/famine physiology!
