(Adapted from a recipe in Sunset Cooking for Two)

Serves 2

1½ tablespoons butter, at room temperature

1 tablespoon minced parsley

1 small clove garlic, minced or pressed

Dash of salt and pepper

An 8-rib rack of lamb

1. Preheat the oven to 400˚.

2. Mix the butter, parsley, garlic, salt and pepper together.

3. Put the rack of lamb, meat-side up, on a rimmed baking sheet. (I covered mine with foil for easy clean-up.) Spread the butter mixture over the meat.

4. Roast for 30 minutes.

5. Remove lamb from the oven. Cover with foil and let it rest for 10 minutes.

6. Cut the roast into individual chops and serve.
