INGREDIENTS
for besan coated masala kaju:
3 cup kaju / cashew (whole)
0.75 cup besan / gram flour
6 tbsp rice flour
1.5 tsp turmeric / haldi
3 tsp kashmiri red chilli powder / lal mirch powder
1.5 tsp chaat masala
pinch of hing / asafoetida
1.5 tsp salt
6-9 tbsp water (to coat)
oil for deep frying
firstly, mix cashew along with besan, rice flour, spices and salt.
now add 2 tbsp of water and mix till the besan batter gets coated well to cashew.
drop the besan coated cashew one by one into medium hot oil.
stir occasionally and fry till cashew turn crunchy.
also fry few curry leaves till it turns crisp.
finally, mix curry leaves along with roasted cashew and masala cashew is ready to serve.
spiced roasted cashew nuts recipe:
firstly heat 1 tbsp ghee and roast in 1 cup cashew nuts to golden brown.
add in ½ tsp chilli powder, ¼ tsp turmeric and ½ tsp salt.
mix well till the spices get coated well.
finally, serve spiced roasted cashew nuts.
