Knuckles and Joints
Hundreds of food stalls lined the main street of the Khan Bazaar. Business was good and ran deep into the night. Tourists dined till midnight. The food could be very specialised. This one focused mainly on the knuckles and joints of lambs!

Pomegranate Juice Anyone?
The pomegranate fruit is a local produce. It is rich in polyphenols which are strong anti-oxidants. You can get a large cup of freshly-pressed undiluted pomegranate juice for only ten yuan.

A local Uyghur cook adding ingredients of mutton soup served in enamel cups that simmer over a heated stove. He sold up to 300 cups of the delicacy on a normal day.
