This traditional Riau Malay cake has a soft texture and a sweet taste that breaks on the tongue, making it popular among a wide range of people. Ingredients:
10 pandan leaves (50 g)
200 ml of water (1 glass)
200 ml of coconut milk (1 cup)
200 gr of sugar (1 cup)
125 grams of medium-protein flour
3 eggs
2 tbsp margarine (melted)
Salt to taste
Steps:
Pandan leaves are washed first and then sliced. Blend the pandan leaves and add water (200 ml). Blend until completely smooth, then strain (only the pandan juice is taken).
Mix the eggs and sugar at high speed until the sugar and eggs turn white and fluffy. (If you don't have a mixer, you can use a regular whisk.)
Add pandan juice and coconut milk, mix well.
Add the flour little by little, using the mixer at low speed until well blended, until the flour runs out, and add a little salt, then stir again.
Finally, add margarine; don't forget to stir again so that the mixture is evenly mixed.
Heat bolu kemojo pan in the oven for 10 minutes (baking bolu kemojo may use embers as a substitute for the oven).
Grease a baking sheet with a little cooking oil so that the dough doesn't stick. Put the dough into the tin.
Bake the dough in the oven at 180°C (if using a tankring oven, use medium heat). Bake for approximately 45–55 minutes.
Remove from the oven; cool first. After that, bolu kemojo is ready to be served.

Kue tradisional Melayu Riau ini teksturnya lembut dan rasanya manis banget, pas banget buat bikin orang jatuh cinta. Karena itu, kue ini populer banget buat semua orang, dari yang tua sampe yang muda. Nah, tapi gak usah jauh-jauh deh buat cobain kue legit ini. Kita bisa bikinnya di rumah bareng-bareng. Proses bikin bolu kemojo ini gampang banget, dan bahannya juga gampang dicari. Yuk, langsung aja mulai, Foodies!
Bahan:
10 lembar daun pandan (50 gr)
200 ml air (1 gelas)
200 ml santan (1 gelas)
200 gr gula pasir (1 gelas)
125 gr tepung terigu protein sedang
3 butir telur
2 sdm margarin (lelehkan)
Garam secukupnya
Steps:
Daun pandan dicuci terlebih dahulu lalu diiris-iris. Haluskan daun pandan dan tambahkan air (200 ml), blender sampai benar-benar halus lalu saring (yang diambil air jus pandannya saja).
Mixer telur dan gula dengan kecepatan tinggi hingga gula halus dan telur menjadi putih dan mengembang. (Jika tidak ada mixer bisa menggunakan pengocok biasa)
Tambahkan jus pandan dan santan. Aduk hingga merata.
Masukkan tepung sedikit demi sedikit, mixer dengan kecepatan rendah hingga tercampur rata sampai tepungnya habis dan tambahkan sedikit garam, lalu aduk kembali.
Terakhir masukkan margarin, jangan lupa aduk kembali supaya adonannya tercampur rata.
Panaskan loyang bolu kemojo kedalam oven selama 10 menit (Memanggang bolu kemojo boleh menggunakan bara api sebagai pengganti oven)
Oleskan loyang menggunakan minyak goreng sedikit saja supaya adonan tidak lengket. Masukkan adonan ke dalam loyang.
Panggang adonan ke dalam oven dengan suhu 180° c (kalo menggunakan oven tangkring, gunakan api sedang saja). Panggang kurang lebih selama 45-55 menit
Keluarkan dari oven, dinginkan terlebih dahulu. Setelah itu bolu kemojo siap disajikan.
