Ingredients asam pedas patin :
500 gr patin (pangas catfish)
1 lime
Salt
Blended seasoning ingredients:
Red Chili (you can use cayenne pepper or curly red chili; the spiciness is according to taste).
5 shallots
3 cloves of garlic
1 candlenut
1 segment of turmeric
1 segment of ginger
1 segment galangal
Other Ingredients:
4 pieces of asam kandis (dried yellow mangoesteen, you can use asam gelugur/asam keping)
1 sheet of turmeric leaf
1 stalk of lemongrass (crushed)
1 bay leaf
3 pieces of kaffir lime leaves
350 ml of water
Salt
Flavoring
Oil
Steps:
Wash ikan patin (pangas catfish) that has been cut clean, then coat the fish with lime juice and salt for 10 minutes so that the slime and fishy smell disappear. After 10 minutes, wash the fish again.
After that, heat some oil in a pan and sauté the ground spices until fragrant.
Add lemongrass leaves, turmeric leaves, bay leaves, and lime leaves. Sauté briefly until wilted, and then pour in water.
Cook until the gravy boils, then add the fish. Stir gently.
Season with flavoring, salt, and asam kandis. Stir thoroughly and gently flip the fish.
Cook the fish until perfectly cooked, the spices meld, and the gravy thickens. Don't forget to make corrections.
Asam pedas ikan patin is ready to be served.

Foodies, Sudah pernah memasak asam pedas, belum? Asam pedas adalah salah satu makanan khas dari Riau, sesuai namanya asam pedas, citra rasa makanan tradisional ini pun asam dan pedas kombinasi yang menggugah selera makan. Kira-kira bahan dan bumbu apa saja ya yang digunakan untuk membuat asam pedas. Kali ini Foodie Corner akan membagikan resep asam pedas patin. Foodies, ayo kita belajar memasak asam pedas patin.
Bahan-bahan patin asam pedas:
500 gr Ikan patin
1 buah Jeruk nipis
Garam
Bahan bumbu yang dihaluskan:
Cabe Merah (Boleh cabe merah rawit atau cabe merah keriting, pedasnya sesuai selera)
5 siung bawang merah
3 siung bawang putih
1 buah kemiri
1 ruas kunyit
1 ruas jahe
1 ruas lengkuas
Bahan-bahan lainnya :
4 keping asam kandis
1 lembar daun kunyit
1 batang serai (digeprek)
1 lembar daun salam
3 lembar daun jeruk
350 ml air
Garam secukupnya
Penyedap rasa
Minyak goreng secukupnya
Steps:
Cuci bersih ikan patin yang sudah dipotong, kemudian lumuri ikan patin dengan air perasan jeruk nipis dan garam selama 10 menit agar lendir dan bau amisnya hilang. Setelah 10 menit, cuci bersih lagi ikan.
Setelah itu, panaskan sedikit minyak dalam wajan lalu tumis bumbu halus sampai harum.
Tambahkan daun serai, daun kunyit, daun salam dan daun jeruk. Tumis sebentar sampai layu baru kemudian tuangkan air.
Masak sampai kuah mendidih baru masukan ikan patin. Aduk perlahan.
Bumbui dengan penyedap rasa, garam, dan asam. Aduk secara merata dan balikkan ikan secara perlahan.
Masak ikan patin sampai matang sempurna, bumbu meresap, dan kuah mengental. Jangan lupa koreksi rasanya.
Ikan patin asam pedas siap untuk disajikan.
