ASIDAH
Asidah is a traditional cake originating from Indragiri Regency, Riau. This cake has a sweet and savory taste with a soft texture that melts on the tongue. This special food is usually served only on certain days, such as traditional festivities, the day of handover shopping gifts (hantaran belanja) in the Malay tradition when couples are getting married, and religious holidays. If Foodies is interested in tasting this cake, you don't have to go all the way to Riau or wait for a traditional event; we can try making it at home. Come on, Foodies, let's just prepare the ingredients.
Ingredients:
2 glasses of flour
1 egg
3 glasses of water
1 glass of sugar
2 cloves & 1 cm cinnamon, finely ground
100 gr margarine, melted
1/2 tsp salt
1 sheet of pandan leaves, mashed
100 gr shallots, thinly sliced
6 tablespoons of cooking oil for frying shallots
Steps:
Fry the thinly sliced shallots in 6 tablespoons oil until golden; drain.
Mix the remaining oil from frying the shallots with melted margarine; stir well. (used for spreading ingredients).
Sift the flour, then add the granulated sugar, beaten eggs, salt, put the ground cloves and cinnamon into a bowl. Stir until well mixed.
Add water to the mixture and stir again until there are no lumps.
Then put the mixture into the pan, add pandan leaves and 5 tablespoons of a mixture of margarine and cooking oil, and add little by little. Turn on the fire using medium heat, then keep stirring until it thickens and doesn't stick to your hands.
Mold it according to your preference, spread the margarine that was mixed earlier, and sprinkle with fried shallots.
Finally, Asidah is ready to be served.

Asidah adalah kue tradisional yang berasal dari Kabupaten Indragiri, Riau. Kue ini memiliki citra rasa manis dan gurih dengan tekstur lembut yang meleleh di lidah. Panganan khas ini biasanya disajikan pada saat hari-hari tertentu saja seperti kenduri adat, hari antar belanja dalam tradisi Melayu saat pasangan hendak menikah, dan hari raya keagamaan. Jika Foodies tertarik untuk mencicipi kue ini tidak harus jauh-jauh ke Riau dahulu atau menunggu acara adat, kita bisa mencoba membuatnya di rumah. Ayo Foodies, langsung saja kita siapkan bahan-bahannya.
Bahan-bahan:
2 gelas tepung terigu
1 butir telur
3 gelas air
1 gelas gula pasir
2 bj cengkeh & 1 cm kayu manis, tumbuk halus
100 gr margarin, cairkan
1/2 sdt garam
1 lbr daun pandan, tumbuk
100 gr bawang merah, iris tipis
6 sdm minyak goreng utk menggoreng bawang merah
Cara membuat:
Goreng bawang merah yg sudah diiris tipis dengan 6 sdm minyak sampai kuning, tiriskan.
Campur minyak sisa menggoreng bawang dengan margarin yg telah dicairkan, aduk rata. (Digunakan untuk bahan olesan)
Ayak tepung terigu lalu masukkan gula pasir, telur yg telah dikocok lepas, garam & masukkan cengkeh dan kayu manis yang sudah dihaluskan ke dalam mangkuk. Aduk hingga tercampur rata.
Tambahkan air ke dalam adonan tadi, dan diaduk kembali secara merata, hingga tidak ada yang menggumpal.
Lalu masukkan adonan ke dalam wajan tambahkan daun pandan dan 5 sdm campuran margarine dan minyak goreng, masukkan sedikit demi sedikit. Nyalakan api, gunakan api sedang lalu aduk-aduk terus hingga mengental & tidak lengket ditangan.
Bentuk sesuai selera, beri olesan margarin yg telah dicampur tadi lalu taburi bawang merah goreng.
Akhirnya, Asidah pun siap disajikan.
