Greek Yogurt Berry Pancakes For A Delicious Brain-Boosting Breakfast

If you’re trying to do your brain good, this recipe is a must-have.

Filled with berries, it’ll deliver a powerful antioxidant punch that will help ward off disease and cognitive decline.

Best of all, it does a great job at balancing proteins, carbohydrates, and dietary fats to keep you well-fueled until lunch.

Note that the recipe does call for all-purpose flour, and this will work best. However, if you wish to change that to whole-grain flour, you can do so as well.

Greek Yogurt Berry Pancakes

Ingredients:

  • 1 cup all-purpose flour

  • 1 cup oats, ground into flour

  • 1 ½ tsp. baking soda

  • ½ tsp. salt

  • 1 ½ cups plain Greek yogurt

  • ½ cup unsweetened almond milk

  • 1 tsp. vanilla extract

  • 1 whole egg

  • 2 egg whites

  • 3 tbsp. almond butter

  • 1 cup blueberries

  • ½ cup raspberries

  • 4 tbsp. sugar-free maple syrup

Directions:

  1. Blend together all the ingredients except the raspberries, blueberries and syrup, mixing dry ingredients first and then adding in wet ingredients.

  2. Fold in 1/2 cup blueberries.

  3. Heat a skillet on medium heat and cook like you would a standard pancake, flipping after 3-4 minutes.

  4. Serve with remaining blueberries and raspberries on top, drizzled with syrup.
