Moa

Moa were ostrichesque flightless birds endemic to New Zealand. There were about nine different species of moa. They were the largest herbivores in New Zealand, hunted only by the also-extinct Haast's eagle*, until they were hunted to extinction by native Maori people around 1440.

The Moa can't be unlocked until you have at least one quagga, one dodo and one thylacine.
