Enclosure houses are like little dimensional portals into larger areas in your zoo. They don't take up much space in the zoo proper, but there's lots of space inside them. They were created to try to solve an ongoing problem for MFZ: when zoos get big, they take a long time to load. Very big zoos often crash browsers. So the idea here is to get you more space, without it all being on the same screen at the same time.
Small enclosure houses can be bought for cash, but you only get one. The large ones cost a lot - 145 diamonds! - but they hold a lot too. You'll see some high-level players with just rows of large houses with thousands of animals in 'em.
Maxsaints has one of the weirdest zoos I've ever seen. It's like a hall of mirrors!
The path tiles outside are codes for what types of enclosures are inside.
Should I buy one?
Not at first, no. As soon as you get to a high enough level, or a big enough zoo, that you feel like it's starting to load too slow...then you might want to think about enclosure houses. (If your computer is awesome but your zoo is huge, you might want to consider your poor friends - I have more than one friend who's complained that visiting larger zoos crash their browsers!)
Organizing your enclosure houses
There are a lot of strategies available. Some people just pack their houses full of animals all willy nilly - they're more like points factories than real zoos. Your friends will almost never visit them, so it's not like they have to look super amazing.

A lot of people like to organize them by biome.
Keeper Joe's water house
One of mine is like a little Easter egg: if you happen to visit it, you end up in maybe the nicest area of my zoo.
Autumnal!
I've even seen 'em just packed with old Halloween decorations, which is...one way to go.
