Well, I mean, the big one is Bram Stoker's Gothic novel Dracula (1897), which honestly is not a terrific novel. The middle part in particular is pretty boring. But Dracula does indeed transform into a bat. (A wolf, too, while we're at it.) There's also the comic book character Batman, who is not a real bat.
