Jam and coconut slice

A very sweet slice with a fluffy coconut meringue topping.

Ingredients

Base

1/4 lb (120g) butter

1/2 cup sugar

1 1/2 cups self-raising flour

1/2 cup jam

Top

1 egg

1/2 cup of sugar

1 cup coconut

Method

Pre-heat oven to 180 degrees Celcius (360 degrees farenheit). To make the base, cream butter and sugar together. Add egg and beat. Add flour and mix then press in shallow tin and spread with jam.

To make the topping, beat the egg then add sugar and beat. Add coconut and mix. Spread evenly over base and bake at 180 degrees for about 15 minutes or until golden on top.
