A buttery biscuit with a sticky jam centre. Great for morning tea or a snack.
Ingredients
6 tablespoons (125g) butter
1/2 cup caster sugar
1 egg
1/2 teaspoon vanilla
1 3/4 cups self-raising flour
1/2 cup jam
Method
Pre-heat oven to moderate temperature (around 160 degrees Celsius).
Beat sugar and butter. Beat the egg separately then add it and the vanilla.
Sift flour and add to the creamed mixture and roll into balls. Place on greased oven trays, allowing room for spreading.
Place a little jam on each biscuit (it helps the jam to stay if you press a little well into the centre with your finger). Bake in a moderate oven for 10 to 15 minutes. Allow to cool on tray.
