Recipes from a Redhead: Pumpkin Pie

by Jillian Palomino

Pumpkin pie is one of the most famous autumn foods in the U.S. It is also one of my family’s most famous recipes.

For the pie crust you will need:

1 cup flour

½ tsp salt

⅓ cup Crisco

3 tbsp water

Mix the flour and salt together. Then using a pastry blender, cut the Crisco half in at a time. Next stir in water with a fork until evenly blended. Then roll out the mixture with a rolling pin on a floured surface to fit the pie pan.

For the pie filling you will need:

2 eggs

⅔ cup sugar

1 average can of pure pumpkin

1 tsp cinnamon

½ tsp salt

¼ tsp cloves

1 can evaporated milk

Mix all these ingredients together and pour it all into the pie shell. Bake at 425 degrees for 20 minutes, then turn then oven down to 350 degrees and continue to bake for 40 minutes.
