Omurice is not only a fun dish to make after school, but also can be a very healthy dish. The rice is fried in marinara sauce, which adds on fiber to the melatonin and tryptophan-rich ingredient.
The egg wrapped around the rice would provide sufficient amounts of calcium, protein and vitamin B in your body, which can help the body produce more melatonin.

Ingredients (serves 2):
¼ onion, minced
4 mushrooms, sliced
3 tbsp green peas
Salt and pepper
1 ½ cup cooked rice
¼ cup tomato pasta sauce
1 tsp cooking oil
2 tbsp cooking oil/ butter
For Egg mixture (mix together & divide into two portions):
4 eggs
2 tbsp milk
Prepare all the ingredients. Heat 1 tsp of oil in a non-stick pan, and fry onions until fragrant.
Then, toss in mushrooms and peas and fry for about 1 minute.
Toss in the rice, pasta sauce, salt and pepper along into the pan and mix the ingredients until everything is evenly distributed.
Transfer the fried rice into a bowl and set aside.
Heat 1 tbsp cooking oil/butter in the non-stick pan on medium high heat. When the pan is well heated, pour in one portion of your egg mixture into the pan.
Quickly swirl the egg mixture with chopsticks, so that the egg is cooked evenly. When the mixture is set but still runny, add half of your fried rice on the middle of the egg mixture.
Use a spatula to flip one side of the egg onto the rice and roll it over and wrap the rice with the egg.
Dish it out onto the plate. If your omurice is not in shape, feel free to use a paper towel to shape it.
Repeat steps 5-8 with the remaining egg mixture and fried rice.
Serve with parsley and an extra scoop of tomato sauce. (optional)
