Why should you eat this?
This dish is mainly composed of root vegetables with complex carbs, so not only does it keep you full, it also doesn't contain much calories. This dish also helps to promote your digestive health as it is rich in fiber
Ingredients (serves 6):
2 large potatoes, cut into large cubes
2 large sweet potatoes, cut into large cubes
2 carrots, cut into large cubes
2 large yellow onion, cut into large slices
10 cloves of garlic, peeled
1 tbsp Olive oil
Salt and pepper, to taste
Preheat the oven at 180 C.
Boil the potatoes and sweet potatoes in boiling water for 7 min to slightly cook the potatoes.
Drain potatoes and remove all excess moisture gently without breaking the potatoes.
Coat the potatoes, sweet potatoes, carrots, onion, garlic with olive oil and season them with salt and pepper.
Lay them out on a baking tray and bake them in the oven for 20-25 mins, until vegetable are cooked.
Serve with grilled chicken or proteins of choice.
