Not sure what to do with left over rice.... well here we go...
Chop the potatoes into small cubes or however you like it and then shallow fry them. Drain any excess oil on a paper towel.
Chop the onions, tomatoes, peppers, coriander and chillies. I had some broccoli to use up so I just steamed it quickly so they were ready to be used.
Place a large frying pan on high heat, add oil and once its hot add chilli flakes. Let chilli flakes infuse within the oil for a few seconds. Then add onions and cook until its slightly golden. Add in the ginger garlic paste and cook for a minute. Add tomatoes, chillies, peppers and broccoli (anything you want to add goes in now) and give that all a stir. Do not over cook the tomatoes. Let this cook for a couple of minutes.
Now add all the spices and let that combine together until you can see its all mixed in. Add lemon juice and salt to taste. Mix in the rice and incorporate all the veggies together with the rice.
Add the coriander and fried onions on top for extra crunch.
