That lady is my beautiful friend, Richa Karki.
This is my take on her delicious comfort recipe..
Preparation
Chop the onions and garlic and sweet peppers and chillies as small as you can. Squish all the plum tomatoes from the can into a bowl, try keep some parts chunky. Chop the spring onions and coriander for garnish.
Lets Cook
In a large saucepan, add the oil, chilli flakes and fry off the garlic until golden. Do not burn! Add onions and cook until translucent. Add the chillies and sweet peppers. Cook for roughly 5-6 minutes.
Add the squished plum tomatoes into the saucepan along with ½ can of water. Add the salt and pepper and simmer for 30 minutes or until the water has reduced. Add the mussels and cook for 4-5 minutes (or as the packet says). Make sure all mussels are opened and the juices are combined together.
Sprinkle spring onions and coriander to garnish. Enjoy with crusty bread
