Puffed balls of pure goodness
Boil potaotes and mash, keep a few quite chunky for added texture. Drain and rinse your chick peas from the tin. Cut the red onions into tiny pieces. I cheat and get ready made pani puri chutney and tamarind chutney.
In a bowl, add your mashed potatoes and red onions. Mix until combined. Add your spices including your amchur and chaat masala sometimes I will add more depending on flavour. Keep tasting it until you get the desired taste. Add fresh coriander and a squeeze of lemon. Mix it all up and set aside.
I garish the tamarind and pani puri mix with coriander. You are set to start making these little balls of goodness.
Get your puffed balls and make a little hole in the middle using your thumb. Add a spoon of your potato mixture and garnish with little bit of sev and chick peas. Pour a spoonful of the tamarind sauce and then a couple of spoonfuls of the pani puri sauce and in it goes into your mouth.
I can literally eat about 10 pani puri's in one sitting or more. These are perfect for gatherings or some good old Indian comfort food.
