Comfort food at its best...
Make the rotli dough, cover with a tea towel and set aside for half and hour.
Boil the potatoes, mash and add all the ingredients in it. Mix everything up.
Get the Tawa (non stick pan) heated up on high.

Take your pre made rotli dough and knead it until all that crispness on top has gone. Take a small amount of the dough (but bigger than the amount you normally take for rotlis) and roll into a ball. Flatten it with your palms and if its easier, use your hands to press the edges whilst turning and making it into a bowl shape the size of your palm. Put the potato mix in the middle of the dough thats in your hand and start closing it by pinching the dough together- you can pull up all the sides and close it so there should be no potato mixture visible. Now flatten that into a flat circle and add a little more flour to it on both sides and roll it out to the size of your choice, do not roll like a rotli, it needs to be slightly on the thicker size depending on how much potato mix you have added. I make mine the size of my entire hand but feel free to make whatever size you prefer. Now its ready to be cooked...
Making sure the Tawa is hot, place the paratha on and let it cook for a minute on one size and then flip it over for the other side to cook. Now spread a little oil- I use butter but you can use ghee, olive oil or sunflower/Vegetable oil- whatever you have. Spread that on one side and then flip it. Now spread oil on the side facing up also so you should now have two sides that you have put oil on. Once all sides are cooked, take off the flame and wipe down the Tawa. I like to do this because it cleans any leftover burnt oil and it cools the Tawa down which gives me enough time to prep for the next paratha while it heats up again.
Keep making parathas until your dough has finished and then this is optional, make a little coriander butter and spread that on for those that love butter. You can also make garlic coriander butter which would go so well with the paratha for extra flavour.
Enjoy this with a side of yoghurt, Ketchup or my favourite, Katki Keri Athanu x
