A family favourite that reminds me of my childhood..
For the dough balls-
For the crab curry-
Dough Balls
In a frying pan, add oil and fry off the onions and chillies. Let this cook for few minutes, do not let it brown too much. Add the tomato paste, tomato puree along with all the spices, lemon juice, coriander and salt to taste. Cook the masala on medium flame until oil separates. Now add the sev and mix both together. If it becomes too dry, add a little water to soften it. Cook this for a few seconds and then add the besan(Gram flour) a Tbsp at a time. Make sure it has been sieved to avoid any lumps. Now mix this all well until it has reached the desired consistency (it'll need to be dry enough so that when you make them in balls later, the shape will hold). Remove from the heat and let it cool until its ready to be made into dough balls.
Once cooled, make dough balls to whatever size you like and set aside.
In a deep saucepan, add the oil and let it get hot. Now add the whole spices and let it infuse in the oil for few seconds. Now add the onions and give it a stir. Let the onions cook for a minute or so, then add the ginger, garlic and chillies. Mix this all together and cook until onions have browned. Now add the tomato mix and stir. Cook the masala on medium low flame for 20 minutes, giving it a stir every few minutes. If it looks too dry, add a little water. Once oil has separated, place the washed crabs inside the saucepan and add water depending on how much gravy you like. I add enough so you can still see the crabs slightly.
Add a little salt (remember that the dough balls you made already have salt) and cook for 30 minutes on low. The crabs should be orangey/pink in colour once cooked. Now place the dough balls on top of your curry and let it steam in the saucepan for 5 mins on low and then switch off. You do not want to over cook the dough balls.
Garnish with coriander on top and serve with lots of rotlis and salad. Enjoy x
