My version of Pizza Express's Pollo Pesto with an indian flavour
Cut the onions and mushrooms into julien slices. Chop the green chillis into tiny pieces. Cut your chicken breast into long stripes or into small chunks. Boil the pasta until its nearly cooked as you will be finishing it off in the oven.
In a saucepan, add your oil and cook the chicken till it has browned, take it out and keep aside. In the same saucepan, heat up the oil again and add your cumin seeds and chillis, fry until brown. Add your red onions and cook until translucent. Add mushrooms and cook until the juices run clear.
Pre heat the oven to 200ยบ. One everything has been combined, add your cooked chicken and mix everything. Whisk the single cream together with the pesto and add to the saucepan. Salt & pepper to taste. Wait until you see the sauce start to thicken and then add your pasta. Mix everything together and put into a baking tray.
Now to garnish the pasta, I usually cover with grated cheese on one half of the tray (I dislike cheese so mine is normally plain) and basil herbs sprinkled on top.
Cook for roughly 20-30 minutes or until cheese has turned golden. Serve with garlic bread and some yummy rainbow salad.
