Fry the chips and keep aside.
Cut all your veggies in bite sized chunks. Chop the garlic in small slices. Slit the Chillis in half.
Chop the coriander and the spring onions for garnish.
In a large frying pan, add the oil and let it heat up. Once hot, add the garlic and Chilli flakes. Once browned, add the peppers, onions, green chillis and fry until they are translucent (Do not over cook them, you still want the crunch).
Now add the ketchup, chilli sauce, soy sauce and vinegar. Sprinkle the chilli powder and salt & pepper. Mix thoroughly and let cook for a couple of minutes.
Add the chips and toss it throughly. Once properly coated, take out of the pan garnish with Coriander and Spring onions and serve immediately.
