Something light and easy to make without the feeling of guilt.
Wash and chop all your veggies very small.
In a small pot over medium heat, add the Passata and mixed herbs, garlic powder and chilli flakes (if you like a bit of heat). Salt and pepper to taste. Let it cook until it reduces and thickens. Once thick, let it cool down completely.
Grate your cheese accordingly.
Heat the oven to 200° degrees.
Take your pitta bread and give it a little rinse under the tap. Add your passata sauce and sprinkle some cheese. Place all your toppings and add few strands of mozzarella cheese all over (or back to cheddar cheese if mozzarella isn't being used). Drizzle Olive oil on top and cook until cheese melts and it browns slightly.
