Made in a pressure cooker and made with lots of love...
Marination Ingredients
Wash your lamb in lemon juice to get rid of the lamb smell and let it infuse in with the lamb for 10-15 minutes. Rinse this and set aside.
Chop the onions, tomatoes, chillies and coriander.
Grind the garlic and ginger to a paste.
Chop the potatoes and put it aside in cold water.
In a bowl, add all the ingredients listed above for marination together. Stir this well and make sure lamb is coated completely. Leave overnight or few hours if you can otherwise you can cook it straightaway.
In a deep pressure cooker, add the 3 Tbsp oil and let it heat up. Add the marinated lamb mix and a little water. Close the lid and wait for 10 whistles. Everyone has different pressure cookers so you may need less whistles or more. You can check if you are unsure and put it back on if it needs more whistles.
Once the whistles are done, make sure you open the pressure cooker carefully making sure the steam is all out before you open. Check and see how tender the lamb is, remember you still need to add potatoes so I did change my saucepan but its optional. Add the potatoes now and a little more water depending on how much gravy you like and also for the potatoes to cook in.
Add salt to taste and cook until potatoes are done and lamb is tender. In the mean time, I made rotli, rice and tomato & onion salad. My potatoes took roughly 40 minutes to cook. You can check by piercing it with a knife.
Garnish with coriander and enjoy x
