The best veggie burger ever...
In a small frying pan, dry roast the peanuts for about 5 mins on medium flame. Once you notice it going slightly brown, take them out of the pan and set aside. The peanuts need to be cooled so you can peel the skin off which should come off easily. I grabbed a handful and rubbed between my hands for skin to come off.
In the same pan, now add the oil and peanuts back in. Add a little bit of each spice according to your batch. Sprinkle some lemon juice on top and season with salt and pepper to taste. Mix throughly until everything has been combined. Store in an air tight container.
Chop the onions and coriander.
Chop the potatoes in half with skin on. Take the seeds out of the pomegranate and wash throughly.
In a deep saucepan, add water and salt and bring to the boil. Add the potatoes and cook until they are soft. Drain and cool completely before you peel the skin off. Mash the potatoes until desired texture.
In the same saucepan, add oil and the dabeli masala mix and cook for few minutes until its has incorporated with the oil. It should look like little grains of masalas combined with oil. Mix in the potato mash and stir until it has all mixed in. The potato mixture shouldn't be oily, more on the dry side. Set aside to cool down.
Get your baps, slice in half. In a frying pan, spread a little butter and place the buns and let it golden on both sides. Take them out and its time to make your burgers. Spread the chilli garlic sauce on both sides. Add the Dabeli potato mix and start layering on the red onions, pomegranate, coriander and sev. Drizzle ketchup or any sauce you prefer and sprinkle some chat masala on top and the burger is ready. Optional -You can spread a little butter on top of of the bun for more flavour.
Enjoy with a can of cold coke.
