Vegetable Paella

2 cups Bomba rice

6 cups vegetable stock

½ cup diced onion

½ cup diced roasted peppers

1 cup canned tomatoes, crushed with juice

2-3 cloves garlic, minced

pinch saffron

1 tsp smoked paprika

1 tsp sweet paprika

1 T fresh thyme

1 cup frozen peas

Roasted multi-color cauliflower

Heat the vegetable stock with the saffron.

Sweat the onion and pepper in oil. Add tomatoes and paprika. And allow to sweat to become aromatic. Stir in the thyme and garlic and cook another minute or so (do not allow the garlic to brown).

Stir in the rice to coat. Add the vegetable stock, salt and pepper and allow to come to a boil. Cover and either turn down to a simmer and allow rice to cook on the stovetop or bake in the oven for 25-30 minutes. Stir in hot, roasted cauliflower and frozen peas.
