Ceviche de Palmito (Hearts of Palm Ceviche)

Hearts of Palm marinated in the style of a Ceviche

1 can hearts of palm, rinsed, drained and roughly chopped

¼ cup red onion, diced

Juice from 1-2 limes with zest

1 cup cucumber, diced

1 cup tomato, diced

Jalapeno finely diced (to taste, and feel free to use a hotter pepper if you like)

Chopped cilantro and/or mint for garnish

Avocado

Soak the onion in lime juice to soften and mellow the flavor

Cut all the vegetables into roughly the same size dice

Toss all the ingredients together (besides cilantro and avocado) and season to taste

Marinate for an hour or 2 (can go longer, but may get mushy after 8 or 9 hours)

Sprinkle the cilantro on as a garnish and either dice the avocado and mix it in right before serving or serve as slices

Serve over tortilla chips, lettuce cups, cucumber cups, or in an avocado half
