Patatas Bravas

2 pounds potatoes (waxy, new or fingerling work really nice)

¼ cup olive oil

Salt and pepper

Sauce:

¼ cup diced onion

2 tablespoon olive oil

3 cloves garlic, minced

½ tsp paprika

2 6 ounce cans tomato paste

2-3 tsp hot sauce

1 cup water

Chopped parsley

Cut potatoes in half (or if small leave whole), bake at 425 for 20 minutes or until brown and cooked through

For Sauce – sweat onion and garlic in olive oil, add paprika, then add tomato paste, water and hot sauce. Season to taste then blend in a blender

Drizzle sauce over potatoes when ready to serve

Garnish with chopped parsley
