Oyster Mushroom Po Boy

For marinade:

¼ cup ground flax seeds

½ cup water

2 T apple cider vinegar

2 T vegan wostershire or liquid aminos

1 T garlic powder

8 ounces oyster mushrooms

Mix all ingredients then add oyster mushrooms and allow them to marinate an hour or so.

Breading:

½ panko breadcumbs

¼ cup cornmeal

2 T flour

1 t salt

Garnish:

Sliced bread and butter pickles

Lettuce leaves

Red cabbage marinated in raspberry vinegar and tossed with salt, pepper, basil, mint and cilantro

Vegan Mayonaise with smoked paprika

Marinate mushrooms for an hour then toss in breading. Deep fry and hold for service.

Assemble in hoagie rolls or Kaiser rolls (dairy free, vegan), with a little slaw, lettuce, pickles and a drizzle of paprika mayonnaise. Serve with potato salad (vegan)
