Cajun Vegetable Boil

This is simply a pot of steamed or boiled vegetables that are served with a spicy mayonnaise.

For the vegetables:

4 ears of corn, cut into thirds

2# baby potatoes

1 head broccoli or Romanesco cauliflower, cut into florets

1# green beans, trimmed

1 red onion, cut into large chunks

Impossible Sausages, cut into rounds

In a pot of cold water, put the potatoes and season with salt and a pinch of cajun seasoning. Bring to a boil. After 5 or 6 minutes, add in the ears of corn, broccoli, green beans and onion and continue to cook until the potatoes are done (the other vegetables can have as much ‘give’ as you like – some people like them very cooked, some prefer slightly al dente). The sausage can either be added at the last minute or grilled and added to the platter when the vegetables are removed.

Using a spider or slotted spoon, remove the vegetables and place them on a large platter. Garnish with sausage if using.

For Sauce:

½ cup vegan butter

1 tsp garlic powder

1 tsp onion powder

2 tsp old bay seasoning

1 tsp smoked sweet paprika

Lemon juice and lemon zest

Simply melt the butter and add the seasonings and allow them to cook so the butter becomes flavorful

Drizzle some over the finished platter and serve the rest for dipping
